This was a big dinner and so it is going to be a longer post. As always, Jamie went all out today with Easter Dinner. We started off with the Ham, Green Bean Casserole, Scallop Potatoes, and Deviled eggs. The Scallop Potatoes were a new recipe that only get a *** rating. After that we had Strawberries and Pound cake. It all was delicious and worth the wait.
Recipe for Ham with Honey and Brown Sugar Glaze is found
HERE. The Recipe for the Pound cake is found
HERE. Here is a list of all the other dishes we had for this lovely Easter Dinner.
Green Bean Casserole
Ingredients:
1 cream of mushroom dry soup mix
1 1/2 cup milk
1 teaspoon soy sauce
Dash of black pepper
4 cup cooked cut green beans
1 1/3 cup fried onions
Mix soup, milk, soy, beans, pepper and 2/3 cup fried onions in 1 1/2 quart casserole dish. Bake at 350 degrees F for 25 minutes or until hot. Stir and sprinkle the remaining fried onions. Bake for 5 minutes.
Deviled Eggs
Ingredients:
Hard Boiled Eggs
Mayonnaise
Smidgen of Mustard
Dash of Paprika
Cut the hard boiled eggs in half and take out the yolk of the egg. Mix it with as much mayonnaise it is going to take of how many eggs you have to cover. You want more mayonnaise then egg yolk. Mix in a little mustard and a stir in until creamy. Take a spoonful of the mixture and but it where the yolk used to be.
Garlic Scalloped Potatoes (Not so tasty for me)
Ingredients:
3 Pounds yellow potatoes, peeled and sliced very thin
2 garlic cloves
6 tablespoons unsalted butter
Coarse kosher salt and freshly ground pepper
3 cups heavy cream
Preheat oven at 325 degrees F. Rinse the sliced potatoes in cold water. Pat dry in a towel. Rub a shallow earthernware dish with the garlic cloves and butter well. Arrange the sliced potatoes in layers in the dish and season with salt and pepper. Dot with the remaining butter and pour the cream over the potatoes. Bake about 1 1/2 hours; it is very important that the temperature be low enough so that the cream does not curdle as it is absorbed slowly into the potatoes. During the last 10 minutes, turn the heat up to 400 degrees F to brown the top. Serve directly from the dish. (Recipe strait from
The Martha Stewart Cookbook. I think Martha was not thinking right with this recipe.)
Overall for 3 hours of cooking you have to be dedicated to what you are doing and love to cook for this Easter Dinner. But the good thing if you get this as the finished product, then your stomach will love you.
Overall Rating **** (only because of the potatoes)
