Burritos with Spanish Rice

Refried Beans
Ingredients:
2 Cups Dry Pinto Beans
1 Cup lard (or substitute)
5 Cups Water
2 Tsp Salt

Rinse the beans, add to large pot with 1/4 cup lard. Add the water boil for 5 min. Reduce hear to medium and cover. Simmer for 2 hours. Add water as needed. Last 30 minutes of cooking add salt. In a separate skillet heat 1/2 cup lard. Add 1 cup beans, mash, add a little liquid from pot of beans. Stir and repeat until all beans and liquid is add. If beans are dry, as more lard.

Spanish Rice: 
Ingredients:
2 tbs. oil
1 cup rice
1/2 cup minced onion
1 can tomato
2 cups water
2 chicken seasoning cubes

Brown rice in oil. Add all ingredients and cook on low-medium for 1 hour or till all liquid is gone and rice is tender. Salt and pepper for taste.

Jamie made her famous Burritos and as always they were delicious! To make the burrito part of it, you just need some ground beef with taco seasoning, lettuce, tomatoes, sour cream and wraps. You know the deal. The Spanish rice and the beans give the burritos that extra push.
